Vegetarian Tuna Salad

½ cup Textured Soy Protein
½ cup finely chopped celery
½ cup chopped almonds
2 tablespoons pickle relish
1 cup Vegenaise or Tofu Mayonnaise
1 teaspoon garlic salt

Soak textured soy protein in water and let stand for about 15 minutes. Drain water from soaked textured soy protein. Mix all ingredients and chill until ready to serve. Serve on a bed of lettuce or other salad greens and garnish with tomatoes and parsley. This recipe keeps well in the refrigerator for 5 days and is excellent in sandwiches.
